Myoglobin as an Inhibitor of Exopeptidases from Lactobacillus sake
The effects of myoglobin on exopeptidases of Lactobacillus sake were determined. Inhibition of the aminopeptidases increased as the myoglobin concentration increased; aminopeptidase 3 was the most affected (90% inhibition).
