Le travail non exhaustif de recension des manuscrits de diététique auquel je me suis livrée a permis de comptabiliser quatre cent vingt-six manuscrits où figure au moins un texte diététique occidental en latin, auxquels s’ajoutent quatre-vingt dix témoins d’ouvrages rédigés en italien et en français...
